Microsoft word formatting and document design

I have approximately 33 training units compromising of approximately 80 pages each that need to be formatted into an amazing training guide with lots of colour in our branding and complete with images.
We like to use tables to tile some of our information particularly with lists and dot points as we can add some colour. We would also like to convert some of the processes in these documents into smart art matching our colours. We like to use images for descriptive lists such as a list on facial expressions. We would also like to include some relevant images to the industry.
We need the information converted into 1 document in a polished book/manual format.
An example of the units that need to be converted are attached and an example of the type of formatting and presentation work is also attached.
I need the documentation for all 33 units to be combined on a per unit base and completed by mid to end February. Happy to pay per unit/ subject on delivery of each unit or a cluster of units.
Please keep in mind that this document is to be transferred to a learning management system.
