Customise a wordpress theme / extension

We have created a website using the templatic vacation rental 2 theme.
However this is designed for rentals with multiple rooms / houses, we need it changing so it is for one property. This involves removing the drop down selection boxes and have it default select our one house.
We also need the pricing format of price per 1 day, 1 week or 1 month and priced on a number of persons basis to be....
a price for the house (doesn't matter about the number of people) and either on a 3 day or 1 week price.
the calendar also shows 1 month per time, ideally we would want this to show the entire year. However this is not essential. Could be an extra milestone.
