Following is my point-wise proposal on your requirements:
* Setting up profiles settings, roles for the two users
* Create workflows, email alerts to help users keep track of opportunity as it's stage progresses
* Configure flowchart as described in the document (yet to be provided)
* Syncing office 365 email with Salesforce org
* Parsing emails to fetch data and create records using Apex (incoming mails needs to be in set format, we can discuss about this in detail)
* Creating templates and cofiguring workflow alerts so that these emails are sent out automatically as soon the defined criteria is met.
I want to assure you that I maintain strong work ethic (I think that you might have bad experience working with freelancer from any country left out of your list)
I can instil confidence in you if we can talk for a short duration (20 minutes, maybe) that I will deliver what I promise. I am fluent in English too, that's an added advantage of working with me.
Individuals are bad (nothing wrong with entire country). Since our time zones vary by just few hours, we will have a lot of overlapping time for any sort of communication.
