After looking to your requirement description, the project is quite simpler. Just you need to take it in proper steps to cover it.
My plan to complete the project would be as follows:
As your robot is somewhat similar to a SLAM robot; here instead you need to integrate a co2 sensor. So, firstly we need to setup urdf robot description model so that we can also simulate the robot in gazebo and rviz for map creation in a custom build environment. Then we need to setup respective required sensors in the model and add plugins to read data to respective sensor topics. So that we can use those topics using custom build nodes as generate map accordingly. And finally setup ros on edge computing device Jetson nano/RPI according to your requirement and setup the robot with ros enabled features.
I'm not going to deep in this cover message. But an overall description is mentioned above with the workflow to happen your project run sucessful.
